Miles Davis’ Chili Makes A Comeback

Chef Jonathan Dixon (he cooks at ‘Cue restaurant in Saugerties, NY) is a big fan of Miles Davis. Without jumping into too much detail, let me just say that over at the new Gilt Taste website, Dixon decides to make Miles’ recipe for chili, which he found while reading John Szwed’s Davis biography – So What.

If you love Miles Davis and you love cooking (or even reading and watching stuff about cooking) I highly recommend reading Dixon’s entertaining account of how he took one big step closer to understanding his musical hero, by making his chili.

Miles Davis’ recipe for chili:

Bacon grease

3 large cloves of garlic

1 green and 1 red pepper

2 pounds ground lean chuck

2 teaspoons cumin

½ a jar of mustard

½ a shot glass of vinegar

2 teaspoons chili powder

Salt and pepper

Pinto or kidney beans

1 can tomatoes

1 can beef broth

The finished product, Szwed notes, is to be served over linguini.
